Oreo Ice Cream, the first ice cream I made!

  This was the first time I made an ice cream, I thought it was a tough thing to make, but it wasn't that difficult as I thought! And it was so delicious, so tempting! My mom tasted mine until she almost finished it unconsciously! ><


Oreo Ice Cream
Ingredients:
4 egg yolks
25g caster sugar
7 Oreo biscuits
450g whipping cream
½ tsp vanilla essence

Directions:
1.      Remove biscuit filling into a bowl and set aside.
2.      Coarsely crush the biscuits by using hand, set aside.
3.      Beat egg yolks, sugar and biscuit filling until well mixed.
4.      Bring 200g of whipping cream to boil at low heat. Remove from heat, add in egg mixture and mix well.
5.      Double-boil the mixture until slightly thick. Remove from heat and leave it to cool.
6.      Whisk 250g of whipping cream until stiff.
7.      Add in the mixture, vanilla essence, and crushed biscuit, stir well.
8.      Pour it into a container and freeze overnight or until set.

Apple Celery Juice~

  A healthy juice. At first I thought it would taste horrible because the celery, I don't hate celery but I just don't like to eat it raw 'cause it's kinda eww to me. But this juice is pretty tasty, it makes me feel fresh. The apple's sweetness made a great combination with celery.


Apple Celery Juice
Ingredients:
1 apple, peeled, cored and cubed
1 celery, washed and cut into chunks
1 tsp lemon juice
2 ice cubes

Directions:
1.      Put apple and celery into a juicer. Pour the juice into a serving glass.
2.      Add lemon juice and ice cube.

*You can add more than 1 celery for this juice, if you like.

Stuffed Baked Potato~~

  A late post, actually I made it on June. I have a lot of food that aren't shared yet, a lot X.X By the way, Stuffed Baked Potato is an easy dish to make, worth a try, I got this recipe from a Potatoes cookbook. And, you can try mix more ingredients like mushroom, sweet corns, and other things you can think of.


Stuffed Baked Potatoes
Ingredients:
2 lb potatoes, scrubbed
2 tsp vegetable oil
1 tsp salt
4 oz butter
1 small onion
4 oz grated cheddar cheese or blue cheese
Salt and pepper to taste
Chives or parsley, to garnish

Directions:
1.      Prick potatoes with fork and put on a baking sheet.
2.      Brush with the oil and sprinkle with salt.
3.      Bake in preheated oven 375’F (190’C) for 1hour.
4.      Meanwhile, melt butter in a small pan over low medium heat.
5.      Add onion and sauté for 8-10 minutes or until soft and golden, set aside.
6.      Cut potatoes in half lengthways, and scoop the flesh out into a big bowl. Set aside the skins.
7.      Coarsely mash the potato flesh. Mix in the onion and the remaining butter.
8.      Season with salt and pepper, mix well. Spoon the mixture back into the potato skins and top with the cheese.
9.      Bake the filled potato skins in the oven for 10 minutes with 400’F (200’C).
10.  Garnish with chives and serve immediately.

Meatball Patties Alfredo

  Oh man~ I feel like eating this again when I writing about this, watching the picture, recalling the taste.. aww it make me starve.. I used chicken breast meat for the meatball patties, work pretty good, of course beef or pork would be perfect too.


Meatball Patties Alfredo
Ingredients:
½ lb spaghetti, cooked and drained
4 tbsp butter
2 tbsp flour
4 cups chicken broth
1 tbsp dried basil
1 tbsp dried oregano
2 cloves garlic, smashed
Salt & pepper to taste
½ cup shredded mozzarella cheese

 Ingredients for Meatball Patties:
2 ground chicken breast
1 tbsp coarsely crushed black pepper
1 onion, grated
1 egg, beaten
1½ tsp salt, or to taste
¼ cup breadcrumbs
Olive oil, for greasing pan

Directions for Meatball Patties:
1.      Gather all the ingredients for meatball patties into a mixing bowl and mix them until well blended.
2.      Form a small ball out of the meat about 1 tbsp (or any size preferred) for each portion.
3.      Grease the pan with olive oil thoroughly, and heat with medium high heat.
4.      Place the meatball patties on pan and sear until nicely browned, each sides.

Directions:
1.      Melt butter in a saucepan. Add in garlic and herbs, sauté about 1-2 minutes.
2.      Stir in flour and make a fine roux.
3.      Pour in chicken broth gradually, and dump in the meatball patties into the sauce. Let it simmer until the sauce is getting thickened.
4.      Season with salt and pepper to taste.
5.      Add cheese and stir until it consisted with the sauce, the sauce will be thicker.
