Lemon Spaghetti~~

  I prepared it this morning for brunch, you know what, I made it spontaneously which was marvelous. I never heard of lemon spaghetti actually. Well, I chose to make it because I had a lot of lemon inside my fridge, a lot. I asked my mom "Do you willing to taste my experiment, I'm not guaranteed I will succeed." And she smiled " It's up to you." Thanks that my mom believe me I can do it, though she didn't said but her face told. After she tasted my Lemon Spaghetti "It really boost my appetite, because it taste a little sour yet unique." Anyway, my mom had second plate XD

Lemon Spaghetti
Ingredients:
50g butter
1/3 cup flour
3 cups chicken stock
½ lemon, juiced
8 oz (230g) sliced chicken breast or bacon (optional)
2 cloves garlic, minced
2-3 tbsp sugar
Salt & pepper to taste
Pinch of rosemary
½ tsp dried thyme or fresh
1/8 tsp cinnamon
A small bunch of cilantro, minced
¼ cup parmesan cheese or other cheese you have
Parsley for garnishing
1 lb spaghetti, cooked and drained

Directions:
1.      Fry sliced chicken or bacon over medium-high heat with melted butter. Few minutes later, add in garlic and cook until chicken turn golden brown. Set aside.
2.      Turn the heat to low, add in flour into the butter. Stir until it turns into blond roux.
3.      Pour in chicken stock and lemon juice, stir constantly until thickened.
4.      Throw in all the ingredients, except cilantro and cheese, into the sauce and simmer over very-low heat about 10-15 minutes.
5.      Add in cilantro and cheese; heat up awhile.
6.      Serve it with spaghetti and garnish with lemon piece on top, additional sauce and parsley.

Ravioli for Two of My Best Friends~

  Ravioli, Italian Cuisine, very similar to Tortellini, but look differently. Some people don't know what's Ravioli, nor Tortellini, especially people in my region XD

  Besides, It similar as well as Chinese Cuisine, Wonton (馄饨). They warp with distinct pastry if compare to each other. Their fillings are different, as well, Wonton's filling usually with ground pork, soy sauce and pepper traditionally. As for Ravioli and Tortellini, they mostly added with cheese and various ingredients.

  I made it with cheddar cheese sauce for my friends, Jimmy and Hammond. I didn't gave them in actual date because their birth date was apposite. Well, glad they love my Ravioli (no-meat version, because Jimmy is a vegetarian XD)
Ravioli
Ingredients:
4-5 cups pasta dough
2 cups ricotta cheese 
1 cup mashed potato
¾ tsp salt
¼ tsp pepper
2 eggs, well beaten
1½ tbsp chopped parsley
1 tbsp parmesan

Directions:
1.      Combine in a large bowl all filling ingredients and set aside.
2.      Divide dough into flour. Lightly roll each portion 1/8 inch thick and cut lengthwise into 5 inch wide strips. (use the strips immediately, do not allow to dry)
3.      Place 2 tsp of the filling 1½ inches from the narrow end and in the centre of the strip.
4.      Continue along the strip, placing the filling at about 3½ inch intervals.
5.      Fold the strip in half lengthwise, covering the mounds of filling. To seal, press the edges together with the tines of a fork. Press gently between the mounds to form rectangles about 3½ inches long.
6.      Cut apart with a pastry cutter and press the cut edges with the tines of a folk to seal.
7.      Cook in a large saucepan brings to boil: 7 quarts water, 2 tbsp salt gradually adds the ravioli (about one-half at a time).
8.      Boil rapidly, uncovered, about 20 minutes or until tender. Remove raviolis with a slotted spoon and drain.
9.      Place on a warmed platter and top with various sauce. Sprinkle with grated Romano or parmesan cheese, serve immediately.

Fun Dish!! Hotdog Pasta!!

  Fun and creative dish, just pierce spaghetti through the hotdog and boil in salted water until tender. Finally, serve with your favourite sauce!! Here is the sauce I served with, Cheddar Cheese Sauce in previous post.

Poached Eggs

  I had this as my breakfast, poached egg with roasted ham and chips.

  I like to eat egg in this way, especially the yolk is still soft and beautiful.

  But my poached eggs was a bit overcooked. So, you know, I couldn't take a picture of breaking the egg yolk XD Sure I will, next time I'll make Eggs Benedict and take a yolk break picture.






Poached Eggs
Ingredients:
2 quarts water
2 tbsp vinegar
Fresh eggs

Directions:
1.      Pour in white vinegar into the simmering water. The acid of the vinegar will hold the egg white together.
2.      Slowly add in the egg into the water, just until it floats to the top and wait for a minute before plates up. About 2 minutes cooking time for each.
3.   If you don't serve it immediately, place it into a bowl of water. Take out when you ready to serve it. 

 *tips: add 1 tbsp of vinegar for per quart of water.

Vichyssoise! What is it? Leek & Potato Soup!!

   Vichyssoise, French cuisine, as known as Leek and Potato Soup. I first saw Vichyssoise was made by Remy, the rat that cooks and have great sense of smell, in a cartoon, Ratatouille. It was one of my favourite film, also a film that inspired me.

  I also made a dish that Remy cooked before, in film, was Ratatouille. It a vegetable stew, made with tomatoes, aubergine (eggplant), courgette (zucchini), peppers, onion, and seasonings. Well, I gotta post that dish soon.

  Actually I made this soup twice already, but tasted the best this time.
Vichyssoise
Ingredients:
4 tablespoons unsalted butter
2 large leeks
2 large russet potatoes, roughly diced
5 cups chicken stock
2 bay leaf
4-6 springs of thyme
1 small bunch of parsley
½ cup cream
¼ cup finely minced chives
Coarse salt, ground black pepper

Directions:
1.      Melt butter in heavy saucepan over medium low heat; add leeks and sauté for about 10 minutes, stirring occasionally so leeks do not brown.
2.      Add potatoes, chicken stock and herbs (bind up with string), and simmer for about 20 minutes until potatoes are tender.
3.      Remove herbs, transfer soup to blender in batches or in blender, purée until smooth, and transfer to clean pot.
4.      Reheat soup, add cream, and bring back to simmer for 2 minutes. Season with salt and pepper.
5.       To serve, garnish with finely minced chives.

Make yourself a PIZZA~

  Pizza, the cousin of Calzone haha, I make this a few times, and I failed at the first time. Because I baked it with microwave x.x

  It's pretty easy to make, you can make it thinner if you want, the pizza will results crusty.

  First of all, you gotta need pizza dough. I not gonna post it again. Go and visit the older post, Calzones, there's pizza dough recipe inside. You don't have to do the 5th step, it's for calzone.

  And then, you also gotta need Spaghetti sauce, you can get the recipe from my older post, as well.

Pizza
Ingredients:
Pizza dough (divide into 2)
Speghetti sauce
Try put something on it:
Onion, bell pepper, pepperoni, prawn, crab meat and ground meat or something
Ingredients you cannot miss:
Mozzarella cheese, parmesan cheese, mixed Italian herb, cornmeal

Directions:
1.   Roll the dough flat, then put it on a dusted baking dish with cornmeal.
2.   Spread some spaghetti sauce on the dough, and along with the ingredients that you wish to add.
3.   Finally, spread cheeses and herbs on top. Bake it on 475'F (250'C) for about 10 minutes.

Mushroom Potatoes~ Easy Dish~

  Everyone can do it, it wouldn't be difficult. But you gotta need a little time and patient. I had this as my breakfast with my mother and sister today, so the recipe below can serve only for 3 person. Or maybe 2 if you have great appetite XD


Mushroom Potatoes
Ingredients:
3 medium potatoes, peeled or leave the skin on, but makes sure it's clean
1 medium onion, sliced
4 cloves garlic, minced
1 (8 ounce) can mushroom stems and pieces, drained and sliced
1 tbsp all-purpose flour
salt and pepper to taste
2 tbsp butter or margarine
1 cup water
½ cup shredded cheddar cheese (or other cheese you have)
Parsley for garnishing (optional)
 
Directions:
1.      Prick potatoes with fork in parallel for tracing.Warp potatoes with foil and bake in preheated oven 400'F (200'C) for 1 hour - 1hour15minutes.
2.   Take out the potatoes, open the foil and let it cool. And then, trace the pricked line and slice.
3.   Saute onion and mushrooms with melted butter in a pan until the onion turn translucent.
4.   Throw in garlic and flour, and stir for awhile.
5.   Pour in water and stir until it gets thickened. Add in potato pieces and the seasonings.
6.   Simmer for 5-15 minutes, if the sauce turns too thicken, you can adjust it with more water.
7.   Throw the cheese in and stir until it melt. It's ready to be served. :D
8.   Garnish it with some parsley before serving.

Calzone Recipe~~

  Hi again! I made it for today's lunch~~ I had improvised it a little bit, just with egg glaze and ingredients inside. Anyway, you can make it rectangular.

  To make this, Calzone, first of all, you have to make pizza dough.


Ingredients inside calzone can be varies, so you can try figure other kind of ingredients which brings different flavour. 





Pizza Dough
Ingredients:
4 cups flour
1 tsp salt
1½ tsp sugar
1 tbsp extra virgin olive oil
1 package dry active yeast
1½ cups warm water, divided
1 tsp olive oil

Directions:
1.      Proof the yeast by blending it with ¼ cup warm water. Let stand until it bubble.
2.      Combine flour, salt sugar and 1 tbsp olive oil; blend well together with yeast mixture.
3.      Place 1 tsp of olive oil on a wooden board. Knead dough on board until smooth and satiny. Place dough in a deep bowl and cover with a piece of plastic wrapper and towel.
4.      Let it rise in a warm place for 1½ hours or until double in bulk.
5.      Divide into 6 equal parts. On a floured board, roll out each section into a 8x10’ rectangle or round.

Here is Calzone's... 
Calzone
Ingredients:
2/3 cup provolone cheese
1/3 cup mozzarella cheese
¼ cup parmesan cheese
1 clove garlic, minced
1 lb ham, diced
1 onion
1 can corn
¼ tsp mixed herb
Salt and pepper to taste 
Corn meal, for dusting on baking dish

Glazing: (mix it altogether)
1 egg
1 tbsp water


Directions:
1.      Add cheese, garlic, onion, corn, ham, salt and pepper, mix well. Divide into 6 equal portions.
3.   Place it on dusted baking dish and glaze tops with egg.
2.      Bake in preheated 375’F (190’C) oven for 30 minutes or until golden brown.
