Calzone!! Cousin of Pizza!!

  Calzone, it's Italian traditional dish, in Italian, "calzone" stand for "stocking" or "trouser". It is similar to pizza, it has cheeses, meat and more. But it taste differently, the bread of pizza is much softer than calzone's. The layer of Calzone is really crispy and harder.

  Well I not gonna post the recipe, yet. I gotta improvise a bit and make it even perfect!! By the way, I forgot to brush eggs on it >.<

Quiche, one more time!

  Just had this for my breakfast >.< before school. My third time Quiche!! It tasted even better!! Here is my older post about Quiche >>  Click Here!!

At first you gotta need to make a pastry dough for the crust...

Pastry Dough
Ingredients:
2 cups flour
1½ sticks unsalted butter, cut into pieces
2 tbsp sugar
1 large egg, lightly beaten
4 tbsp chilled dry white wine

Directions:
1.      Bring the butter to room temperature. Mix the butter and flour together just until crumbly.
2.      Add the sugar, egg and wine, mixing into soft dough.
3.      Shape the dough into one or two balls, and refrigerate, wrapped in plastic wrap until ready to use.

·         The addition of both wine and egg really help to make the crust tender. 


     Time for Quiche recipe!! 
Quiche
Ingredients:
10 oz (280g) pastry dough
3 large eggs
1 cup crème fraiche (you can substitute it with yogurt or sour cream)
Salt & black pepper to taste
1 tsp nutmeg
1 tsp rosemary powder
2oz (55g) butter
10½oz (300g) bacon (well, I used ham)

Directions:
1.      Roll out pastry to desire thickness and line on tart pan 24cm (10inch) in diameter and refrigerate for 20 minutes at least.
2.      Combine eggs, crème fraiche, salt, black pepper and nutmeg in a large bowl, whisk until well blended, set aside.
3.      Bake the pastry dough at 400’F (200’C) for 10 minutes.
4.      While baking, fry bacon until golden brown with melted butter.
5.      Remove pastry from the tart pan and bake for another 5 minutes.
6.      Fill in with bacon, or ham, and the egg mixture into the pastry and bake for 30 minutes.

  
  Sadly, I couldn't found bacon in any grocery store. But I think it works perfectly with ham!! By the way, it's my family's favourite. ~~Enjoy with your own Quiche~~

Mushroom Spaghetti Alfredo Recipe~~

  Some people don't make alfredo sauce, but just add more cheese and heavy cream instead, well, it work nice as well.

  First, you gotta get alfredo sauce prepared..

AlfredoSauce
Ingredients:
100g heavy cream
600g milk
140g butter (save 40g butter for later step)
100g flour

Directions:
1.      Combine milk and cream in a bowl, and set aside.
2.      Melt 100g butter in a pan, then, add flour into melted butter and stir slowly until smooth.
3.      Pour 1/3 of the milk mixture in the roux and stir until well mixed.
4.      Repeat the step 2 more time, and then add in 40g melted butter to smoothen the sauce.
5.      It is done and ready for the other recipes.

          If you don't need that much, you can divide all the ingredients. Or, preserve it in a jar in refrigerator.
  
Now for the main recipe..
Mushroom Spaghetti Alfredo
Ingredients:
200g spaghetti, boiled and drained
100g shiitake mushroom, soaked, rinsed and sliced
100g chicken breast, sliced
1 onion, diced
2 cloves garlic, diced
2 tbsp olive oil
80g alfredo sauce (add more or less, for desired thickness)
200g chicken broth
Salt & pepper to taste
¼-½ cups parmesan cheese
Parsley for garnishing

Directions:
1.      Heat pan with olive oil over medium-high heat. Sauté onion until golden brown. Add in mushroom, chicken breast and garlic then sauté until soft and tender. Approximately 5-8 minutes.
2.      Dump in alfredo sauce and chicken broth, boil it until the sauce is thickened.
3.      Season well with salt and pepper.
4.      Stir in cheese and mix it well.
5.      It’s ready to be served when the cheese is melted.
6.      Garnish parsley before serving.

Mexican Tortilla Pie

  Mexican Tortilla pie, do you ever heard that? It's a bit similar to lasagna, just instead lasagna sheet with tortilla.

  There are two kinds of tortilla, one is Corn Tortilla and another is Flour Tortilla.Tortilla is really a useful and delicious. It can be used for Tacos, Fajitas, Burritos, Enchiladas, Tortilla Soup and more of it.

   It really startled me, because it had been introduced since 300BC!!

   How to make...

Homemade Flour Tortilla
Ingredients:
2 tsp baking powder
3½ (525g) cups flour
1 tsp salt
7 tbsp (3.5oz/100g) vegetable shortening or corn oil
1 cup warm water

Directions:
1.      Mix whole ingredient except warm water.
2.      Pour in the water and start to knead the dough.
3.      Cover with clean cloth and let it rest for 15 minutes.
4.      After that, divide it into few portions with 1.5 ounce (43-45g) each. And then, rest for a few minutes again.
5.      Take a tortilla ball and press it on a clean table, then roll it and turn 45 degree and roll, do the same 2 more times.
6.      Heat up on a hot pan and flip it.

How to make...

Mexican Tortilla Pie
Ingredients:
2 tbsp olive oil
1 large red onion, finely chopped
2 garlic cloves, crushed
500g beef mince
1 small red capsicum, finely chopped
125g can corn kernels, drained and rinsed
2 tsp Mexican chilli powder
415g can dice tomatoes
½ cup torn fresh coriander leaves
4 salsa-flavored tortillas
1½ cups grated cheese
1 large tomato, deseeded, finely chopped

Directions:
1.      Preheat oven to 180’C. Heat oil in a frying pan over medium-high heat. Reserve 2 tbsp onion. Add garlic and remaining onion to pan. Cook, stirring, for 3 minutes or until soft. Add mince. Cook, breaking up mince with a wooden spoon, for 8 minutes or until browned.
2.      Add capsicum, corn and chilli powder. Cook, stirring, for 3 minutes or until capsicum is just tender. Stir in diced tomatoes. Reduce heat to medium. Simmer, stirring, for 5 minutes or until mixture is thick. Add half the coriander. Season with salt. Stir to combine. Set aside for 10 minutes to cool.
3.      Place a 6cm-deep, 20cm round spring-form pan on a baking tray. Place 1 tortilla in base of pan. Spread one-third of the mince mixture over tortilla. Sprinkle with 1/3 cup of cheese. Repeat layers twice with remaining tortillas, mince mixture and cheese, finishing with 1 tortilla. Sprinkle with remaining cheese.
4.      Bake for 15 minutes or until cheese is golden. Set aside for 5 minutes before removing from pan.
5.      Meanwhile, combine chopped tomato, reserved onion and coriander in a bowl. Serve pie with tomato mixture.

Fried Calamari = Fried Squid

  It's like Japanese Tempura, coated with flour, eggs and bread crumbs, and then deep fry. I don't like squids actually except this one, because it's fried? I guess...XD

  I made it last 2 days, pretty late to post. Because i was not in the right mood.

  Some people used squid rings, it works the same. The key is the flour, egg and bread crumbs, we need those for crispiness and egg to hold bread crumbs. Of course you can serve it with salad, as in main dish. Well, here's the recipe for fried calamari...

Ingredient:
300g squid or squid ring
1 tbsp minced garlic
1 tbsp ginger juice
salt & pepper to taste
100g flour
100g bread crumbs
1 egg,whisked
oil for frying

Directions:
1. Marinate squids with minced garlic, ginger juice, salt and pepper overnight, or at least 2-6 hours, in refrigerator.

2. Take the marinated squids out of refrigerator, coat with flour for 1st layer.
3. And then, get dunked with egg. For last layer, coat it with bread crumbs by rolling on the bread crumbs.
4. Fried it until golden brown with hot oil.

Lasagna~~ I like it, like it~~

 "It's not a dish. It's a stuff of dreams. It's a food of the god..", said Garfield XD I have to admit... IT IS!! I made this for my dinner, well, I start making it by noon. Wow, it took really long to be done because I making homemade pasta for lasagna sheets. It could be faster if I used the instant or quick-boil lasagna sheets which I have to buy /.\ Plus it's costly. So I'm really tired yet worth.

  Here is the recipe for Homemade Pasta, so maybe you can do it your own too. Trust me, it wouldn't be hard. And do remember you need a pasta maker or you have to roll it yourself, warn ya you might get exhausted.


Homemade Pasta
Ingredients:
2¼-1/3 cups flour (270-280g)
2 large eggs
1 tsp salt
1 tbsp olive oil
1/3 cup water

Directions:
1.      Gather the flour on a clean board or table, and then make a hole on the centre of the flour.
2.      Pour the eggs into the hole and whisk carefully. Do not spill the eggs or break the wall.
3.      Whisk in salt, olive oil and water carefully and slowly combine the flour together.
4.      Knead it until combined and a bit stiff yet elastic, and not sticky. Shape it into ball and cover with a big bowl to prevent it from dried up, and let it rest for 20 minutes.
5.      Separate the dough into a few portions. Roll it by using pasta maker.

As for lasagna, you gotta boil the homemade lasagna sheet until it start floating and cook for 5 minutes. See below for the recipe of  lasagna. You also can buy one ready-made spaghetti sauce from shop to instead of self-made. And Béchamel sauce, of course, but with cheese. therefore it should be Cheddar Cheese Sauce =b









Spaghetti Sauce
Ingredients:
Guess who is she? She's my MOM, Not my SISTER.
Many people made mistakes.
1 onion
3 tbsp olive oil
1 tbsp basil
1 tbsp oregano
1 lb grounded beef(optional)
1/3 cup wine
3-5 crushed tomatoes
15oz (425g) tomato sauce
1-2 tbsp tomato puree
1 bay leaf
1 tsp salt
1 tsp black pepper
1 tbsp sugar

Directions:
1.      Sauté onion with olive oil.
2.      When onion turns a little golden brown, add garlic and herbs, except bay leaf.
3.      A few minutes later, add grounded beef and separate it.
4.      Add the rest of the ingredients, stir well.
Lasgna in process
5.      Simmer for ½ hour, stir it if needed.
6.      Serve with pasta.


Cheddar Cheese Sauce
Ingredients:
25 g butter
25 g flour
300 ml milk
1 quarter of an onion, peeled
2 bay leaves
4 cloves
A pinch of nutmeg
Salt and pepper
5 pieces cheddar cheese
Directions:
1.      Pour the milk into the small pot and add the onion, bay leaves and cloves. Slowly heat until just before boiling then turn off the heat and leave for 5 minutes to infuse. Then cool it down.
2.      After 5 minutes remove the onion, bay leaves and cloves and discard.
3.      To make the sauce, melt the butter in a pan and add the flour. Stir over a low heat for 1-2 minutes to create a blond roux.
4.      Remove the pan from the heat. Gradually add the milk (best with cold milk, to reduce burn rate) beating constantly to blend it with the roux.
5.      Bring to the boil, stirring all the time. Lower the heat and simmer until the sauce reaches the desired thickness.After that, add in the cheeses.
6.      Season the sauce with a pinch of nutmeg, salt and a couple of turns of pepper.
7.      Strain the sauce through the sieve into a bowl.

For lasagna, you need extra ingredients: ½ cup mozzarella cheese(grated), ½ cup parmesan cheese(grated)
  Now you have done those 2 sauce and cheeses, you gotta arrange the lasagna. Before the 1st layer, spread a bit of spaghetti sauce to make it non-stick, and then, start put the pasta over it. 2nd layer, pour some spaghetti sauce, and 3rd with cheese sauce. Just repeat these steps 2 more times. In summary, pasta>sauce>cheeses>pasta>sauce>cheeses>pasta>sauce> cheese>pasta>grated cheese, and ready for baking time..
  Preheat your oven on 325'F(180'C), bake for 35minutes covered with aluminium foil and uncovered 35 minutes more or until golden brown. Enjoy, but caution, it's HOT you might burnt your tongue so let it cool down just for 5-15 minutes.

Fish & Chips~~

  Very common, quick, easy and simple dish, it's British dishes originally. I know many people will never resist it XD Even whole my family loved it. I love the crispiness of the fish, it goes well with tartar sauce, too.

Here's the recipe for the batter (for 4 pieces dory fish):

200g plain flour
2 tsp baking powder
½ tsp salt
½ tsp pepper
2 tbsp oil
280ml water

After you done the batter, dunk the fish in and get it covered completely ,and then, fry it in the hot oil..

For the tartar sauce you gotta need:
100g mayonnaise
2 tbsp pickled cucumber
1 tbsp chopped capers
½ tsp parsley
Salt to taste

Just mix it until well blended~~
You can serve it with some potato chips too
