Love Super Spicy Hot Food?? Try Thai Recipe "Pad Prik"!!

  I love it since I ate my first Pad Prik at Times Square Mall in KL. Pad Prik was originated from Thai, of course, "Pad Prik" traslated from Thai is "Fresh Chilli"!

  I searched for this recipe on websites after the trip at KL. Well, I did found one, and I finally made Pad Prik today's lunch. Wow! It's hot ,yet nice.

  There was many kind of Pad Prik, some with chicken, beef or seafood.

   See below for the recipe, I simply copied it from my Document of Recipes.. :D I key in every recipe I had made or hadn't, into the document~ hark working, wasn't I? XD


Ingredients:
2 tbsp garlic
½ cup shallot, finely sliced
½ cup green jalapeño, sliced
½ cup red jalapeño, sliced
5 tbsp fish sauce
2 tbsp dark sweet soy sauce
2 tbsp palm sugar
2 tbsp sesame oil
2 tbsp rice starch mix with 1 tbsp water

Directions:
1.      Heat sesame oil in a large skillet.
2.      Sauté garlic, shallots and chilies for 3 minutes.
3.      Add the remaining ingredients and sauté for a further 2-3 minutes until cooked.
4.      Serve with rice.

·         To make Pad Prik with meat or seafood, marinade the meat (2lb) with:
-2 tbsp seasoned fish sauce
-2 tbsp rice starch
-1 tsp crushed black pepper
·         Add in the meat at 2nd step.
·         For extra ingredients sauté, add 3 whisked eggs in 3rd step.

Veggie Spaghetti!!

  I know most people don't like vegetables, like my friends XD except one, he is vegetarian, Jimmy Chin, my best friend too. I thought about him when I cooked this, usually he couldn't eat most of the food I made, sad... But he is able to taste this one!

  Well, I cooked this for my breakfast spontaneously XD Which means I didn't follow any recipe book! Have no fear of this spaghetti, it was delicious, I asked my mom's opinion.

  For the recipe... I guess you can do it on your own, the point is the taste of veggies.

Here's some suggestion:
-Red, Yellow, Green bell pepper (no BLUE XD)
-Broccoli ^^ (I loved it though I didn't add it in)
-Baby corn, Cherry tomatoes, Carrot (Just any veggies that you have, but don't add toooo much Xb)
-Olive oil (Important, it brings the nice flavour)
-Butter
-Salt&Pepper
-A bit of vegetable stock

  It's really easy, just saute the veggies with butter and olive oil in medium high heat, the harder veggies first then the softer. After a few minutes, add in stock and the seasoning. Then add spaghetti to mix well together. And serve with grated Parmesan cheese on top.

Cappuccino

  What a tiresome day, I went home after the exam. My two cousin, Benny and Alvin, was with me. We played computer together at my home, though tomorrow still have exam.XD

  Benny said " I'm hungry, anything for me to chew?XD". Haha... So I intended to make cappuccino, also to energize myself incidentally.

  Hmmm~~ Totally satisfied~~




Here is the recipe of Cappuccino:
  In ratio:  1:1:1 = Espresso : Hot Milk : Foams of Milk 
  -sugar, coco powder, cinnamon powder (adjust all these with your taste, you can add more if you want it taste stronger. But do not add too much!XD)
  Sprinkle some grated chocolate, coco powder, cinnamon, nutmeg or vanilla powder.

Directions:
1.Heat espresso and milk, along with sugar, coco powder and cinnamon all together 5-8 minutes, don't boil it.
2.Meanwhile, heat the milk until it's really hot. Then whip it until foams appeared.
3.Pour heated cappuccino into a cup,and left 1/3 space of the cup for the foams.
4.Sprinkle before serving, Enjoy~~

Spaghetti alla Carbonara

  It's been a long time since I've touched my blog, since the exam was approaching last week. I was supposed to post this up yesterday but i didn't, cause i was too lazy XD and tired from the studies.

  The exam yesterday finished really fast, it started from 7:00a.m.to 9:30a.m. Hooray :D,  I got this feeling as soon as i went home plus my stomach as growling as i haven't had my breakfast yet. So I prepared this Carbonara,  the reason is, I've really missed the taste of Cabonara. Its been a long time that I didn't make this since the first picture of this food, Caronara, upload to my album "World Cuisine" on facebook. THE FIRST FOOD I HAD POSTED ON FACEBOOK!! I made it with Elbow Macaroni because that's what I had XD

  Speaking of origin of Spaghetti alla Carbonara, well, you heard that name, sound very Italian~ I love the taste of egg, cheese, olive oil and ham. Following tradition, they added pork into carbonara such as bacon, but I substituted pork with ham. It worked just as good :d Finally, They garnished it with grated cheese, MAGNIFICENT!! BUT, I didn't because I just realized after I ate it. Too late T.T

My special creation Curry Alfredo!!

My Second Curry Alfredo!
  YOU MIGHT HEARD OF CHICKEN ALFREDO, MUSHROOM ALFREDO, GARLIC ALFREDO, CAULIFLOWER ALFREDO...... BUT DO YOU HEARD OF CURRY ALFREDO? IF YOU DO THAT MEANS YOU ARE LUCKY XD
  
  It is kinda rare and hard to looking for in restaurant or cookbook. Because it taste horrible and disgusting? Definitely not, I must say, it's darn delicious. You'll thinking what I thinking if you do love both curry and spaghetti with alfredo sauce. 

  First I have to declare that curry alfredo isn't originated from me. Anyway, there is nowhere can be found about its origins. I considered this version is originated by me.

  I created it, the curry alfredo in the picture above, with more additional ingredients which will make it taste nice. It's really a major different, to compare with my first one, see below :)

As you can see, wasn't I right? it's complete different, I mean the sauce. Less creaminess, not very much like curry XD but still good.
However, my second curry alfredo is better :)
For sure, next time will be the BEST!! :D

Curry Spaghetti Alfredo
Ingredients:
200g spaghetti, boiled and drained
200g ground meat (chicken, beef or pork)
15g curry powder (add more if the taste of curry isn’t rich)
2 cloves garlic
1 onion, diced
1 tbsp dried basil
1 tbsp dried oregano
200g chicken broth
3 Lemon grass, blended
A bunch of curry leaves
¼ tsp cinnamon powder
2-5 cloves
2-4 star anise
80g alfredo sauce
60g heavy cream
2 tbsp olive oil
Salt & pepper to taste
Parsley for garnishing

Directions:
1.      Heat pan with olive oil on medium-high heat. Sauté onion, dried basil, dried oregano and lemon grass until it turns soft and a bit golden.
2.      Dump in ground meat, garlic, curry powder and curry leaves, then stir and cook for awhile until the meat is getting done.
3.      Pour in chicken broth, along with all the ingredients except alfredo sauce and heavy cream.
4.      Simmer for 25-30 minutes.
5.      Add in alfredo sauce and heavy cream, stir until it’s thickened. Season well with salt and pepper.
6.      Save a few cups of the curry sauce and set aside. Mix the sauce with the spaghetti.
7.      Before serving pour some curry sauce on top and garnish with parsley.
